a quick update…

i am happy to tell you:

that the Boy is officially riding on his own!
we are all very excited! i even caught a little celebratory fist pump:
the Bug and I stepped out onto the beach last week…
to watch the space shuttle launch:


it is truly fascinating!
and because you all are familiar with our stuff around these parts, i figured i’d go ahead and tell you about this before you ask. the Hubs b-day is this week, and a bunch of his friends decided he needed one of these, so they all got together and surprised him BIG TIME last night.
we’re always kinda behind the ball with technology stuff like that, and probably would’ve used our old box TV until it died, but it sure is a blast to have an update! what a sweet thing for Jake’s friends to want to bless him (and me!) with something that they knew we’d never purchase for ourselves! thanks friends!! really!!! ya’ll are awesome!!

now i just need to figure out what exactly i’m going to do with all those cords and accessories. if anyone has any great suggestions on a cool entertainment center, maybe with some glass doors?? and shelves? i’d be happy to hear your thoughts!

and do you see those cool pillows? i got those at IKEA this weekend while Jake and I were in Orlando for a little conference. i wish i could’ve brought that whole store home with me!

okay…gotta run. off to create some kind of concoction with peanut butter and oreos. i’ll try to tell you all about it if it works!

i’m also planning to come back this week with a really really really good recipe, that changes things up just a bit around here! and i might have some photos to share too of that sweet little babe from last week!

SMORES with Homemade Marshmallows

i’m back…with that promised recipe!

my friend Amy B brought these to a get together a long time ago, and i instantly fell in love with the cuteness and taste! i should’ve called her for tips, cause her’s look way cooler and much more professional! maybe she’ll give me some lessons on pastry making/baking someday??!!

anyway…i had made homemade marshmallows a few times, but loved the idea of turning them into these fun smores creations. so i’ll show you the how-to…

so to start with, you have to make some homemade marshmallows. do not be intimidated. if you have an electric mixer and a candy thermometer, its easy as pie!!

i’ve included the recipe card for the Marshmallows at the bottom of the post below. here’s the step by step:

cook the following ingredients over medium heat, stirring until sugar is dissolved.
increase heat, and…
slowly pour syrup mixture into mixing bowl, combining with gelatin over low speed. then:


i made these for Valentine’s Day, hence the pink color!
Let mixture sit out in dish overnight to dry out.


once all your marshmallows are cut:

melt some chocolate. i use Almond Bark for anything that i have to dip or coat in chocolate…its very easy and foolproof:

to enjoy them at their prime, eat your smores as soon as the chocolate has hardened. the graham crackers get soft pretty quickly, even when in an airtight container. although that didn’t stop us from polishing them all off a few days later, soggy graham crackers and all!

for your viewing pleasure…

the crazies asked me if they could make their own breakfast the other day. i agreed to letting them use the toaster to toast some waffles. but i kept hearing them laughing hysterically, so i checked in on them and captured the following video of what they were doing. i laugh every single time i watch it. Six waffles and lots of laughs later, we finally finished breakfast. thought you might enjoy!
