Spicy Thai Noodles

i got this recipe from a friend of mine. a really really cool friend of mine. she and her sisters make this recipe. they are all really really cool. but my one friend doesn’t like to have attention drawn to her, so i’ll leave her unnamed (wink wink :)

seriously, though, they are awesome and some of my favorite people to hang out with. and they are good cooks. so i hope to steal more of their recipes in the future! and if i do, and they are even half as good as this one, i’ll be sure to share them with you!

so here goes…a recipe that changes things up a bit around here. this isn’t your momma’s chicken pot pie, same old casserole, etc!!

(recipe card at bottom of post!)

warning…i used too much red pepper, and it was too hot for my fam. i was warned, but i thought i was tough and cool and tried using a little more. i was wrong…i am not tough. and i forgot about my kids. they really aren’t tough. so i would suggest using 1 TBSP, or less, depending on your preference in heat. that should be plenty of spice without being HOT! don’t say i didn’t warn you!

and sesame oil can be found in any grocery store on the ethnic food aisle, with asian cooking ingredients.

(there will be liquid in bottom of bowl. that’s okay, cause you just keep stirring it up!)

chop up:

***UPDATE:: after making this recipe multiple times, i now only use the sesame oil and completely omit the vegetable oil.
let me know what you think!

ps: remember my friend Anne that i told you all about a long time ago? my dear sorority sister (my big sis) who found out this summer that she has brain cancer? please PLEASE pray for her tomorrow. she is undergoing surgery again. we serve a BIG God who is the Ultimate Healer! so please join with me in asking Him to heal her!!

a feast for your eyes

i gave you a peek at this little one last week. he’s the firstborn of a friend of mine from high school and college, and i had the sheer privilege of taking some newborn shots of this little guy when he was only 10 days old. i thought you might enjoy seeing them, cause he’s about the cutest thing i’ve seen in a long time!

you would’ve thought he was a model and that he knew exactly what he was doing, cause once he got going, the adorableness just didn’t stop!

can you believe how he’s holding his head up at 10 days old?? we couldn’t stop laughing in awe at his cuteness and ability!! this was totally him…with no help!

his mom and i were in the same sorority at UF, so we had to document that he is a Gator’s fan since birth!

a sweet moment with mom…beautiful!
and with dad:

that’s the kind of sweetness that makes me wish i had a little babe in this house! (but not enough wishing to do anything about it :)

have a fun weekend,
