eggs…and a Happy Day.

every year, i struggle to decide what technique to use when hard boiling eggs. sometime they turn out, sometimes they don’t. but, thanks to my sister-in-law, Lisa, i think i’ve found a keeper! i think this is the perfect recipe, just in case you need a good one!

first off, make a single layer of eggs in a large pot, and cover with cold water, an inch above the eggs.

cover, and bring to a boil.
immediately, turn heat to low, cover pot, and simmer for 15 minutes.
after 15 minutes, take pot off heat, and gently run cold water over the eggs in the pot. do this for 5 minutes.
they peel easily and perfectly:
and are perfectly hard cooked, and maintain a great color (no gray!)
can’t wait to dye them this evening!


this morning we went to our local grocery store (another reason to love it…see here), for a neighborhood Easter Egg hunt throughout the store.

i’m not sure it gets any cuter than searching for Easter Eggs in the produce section!
Daddy tried to convince the bug that an eggplant qualified as an Easter Egg…she wasn’t buyin’ it!
my kids’ breakfast consisted of tootsie rolls and swedish fish . i’m pretty sure its not gonna get any better for the rest of the weekend!
