C is for Cookie…

one last recipe to share with you for this holiday season, then i’m signing off for now!

a friend of mine made these for a party the other night, and passed along the recipe to me (thanks Danielle!) cause i instantly fell in love. they taste just like my favorite Girl Scout Cookie…Thin Mints!!! (not lying…they really do!)


once again, this is a Martha classic, and the full recipe is here.

but i’ll take you through some steps, just cause its fun to see!
sift together:

one quick note about the unsweetened Dutch process cocoa powder….i couldn’t find it at walmart, but i had some regular unsweetened cocoa powder on hand, so i googled and did some calculations based on my findings, and ended up using 12 TBSP of unsweetened cocoa powder, and 1/2 teaspoon baking soda, in addition to the 1/2 teaspoon baking soda that the original recipe calls for. it turned out just fine!

note: the recipe calls for peppermint extract. all i could find was mint extract. to be honest, i have no idea if there is a difference or not! but they taste yummy, so i’m thinking it doesn’t matter!


once out of fridge, let dough sit for 10 minutes to soften.

bake at 325 degrees for 12 minutes.

transfer parchment paper to cooling racks and let cool completely.





and i have to show you what i just happened upon. this is our nativity scene at the moment. it looks as if mary, joseph and baby jesus are in time out, cause they are all facing the corner, and the rest of the bethlehem peeps are forming a line for some unknown reason. i’d love to know the thought process behind this one!
