with a little help from my friends (and a recipe!)
hello friends!!!
bella was helping me bake a birthday cake for her uncle this morning…three of her uncles all have birthdays in the same week! crazy huh? (matt and patrick…wish we could make cakes for you too and ship them! but we didn’t think that would work!) but anway…while the bug was happily lending me a hand, it gave me the idea that i could maybe bribe you to help me with something!!
so, i’m wondering if we can make a trade today?? can i tempt you to help me out by bribing you with a cheap, easy, quick, yummy recipe at the end of this post??? (fyi: although it looks like it, its NOT mexican!)
intrigued?? interested?? keep reading…
here’s the deal…
you all have asked some great questions over the last few months and i’ve racked my brain as to the best way to answer your questions that you’ve posted or emailed me…and i just can’t seem to find a good system. so i want to try something, but it will require your participation! (and its a risk for me, cause there’s a good chance that no one will respond, and that might leave me feeling just a tad lonely! but i’ll take the risk!!) anyway…there have been some great questions posed since the start of this blog. some i have answered in posts, some i’ve emailed responses (when i’ve had access to an email address!) but others have simply gone unanswered…not because i don’t want to answer them, but because i just don’t know a good way to! i could answer them in the comments section, but what are the chances that you’ll go back to look?
and i’ve had this fear that you’ll stop asking questions since i haven’t been great about answering them!!
so…i came up with an idea. if you have ever posted a question that you would like answered, or simply have a question that you want to ask…about anything, a recipe, an idea, a craft, kiddos, life, what i eat for breakfast :), will you PLEASE ask it in the comments section on this post? then…in a few days, i’ll take all those questions, and do a post of Q&A’s! now…be forewarned, i’m not saying all this cause i have great answers, nor am i assuming that you need or want to know anything, but i thought it might be fun to take some time to do a Q&A, just in case you’ve wondered something and haven’t asked, and its been hanging over my head that i haven’t figured out how to respond to you, so i think this might be a good way! and after this, from now on, you can post your questions in the comments section on any post, and if this works, then periodically i’ll do Q&A posts! (or just directly get back to you if i have an email) get it? got it? good!
so…ask away! if you are like me, and you love to learn about people, life, specifics, then you too might wish that you had an open door to ask people questions about any and all things, so some of you may like this! if you aren’t like me, then ignore this post, and just consider this a freebie and enjoy the following recipe!!
HOISIN CHICKEN WRAPS
ingredients:
as well as some shredded chicken, shredded lettuce, and flour tortillas.
a note about the chicken: to make it super simple, just use a rotisserie chicken from the grocery store! however, i had some chicken breasts on hand, so i simply put them in the microwave in a bowl of water, and cooked them until they were no longer pink. i then shredded them with two forks, and browned them up in a skillet with some salt and pepper.
while you are browning your chicken, or shredding your rotisserie chicken, heat your oil in a skillet, and add the garlic, onions, water chestnuts, and carrots. cook for about 1 minute, until tender.

add in the chicken, hoisin sauce, rice vinegar, soy sauce, and cashews, and heat for 2-3 minutes, stirring to combine ingredients.
warm tortilla to soften. (although i’m a big fan of whole wheat tortillas, i actually think using flour tortillas in this recipe is key!) and fill it with the chicken mixture. top it with some shredded lettuce and some more soy sauce. roll it up:
and enjoy, all the while smiling to yourself that this yummy meal took all of 10 minutes to prepare and cook!!

so…was that a good enough bribe?? i guess i’ll find out!!
